The sturgeon is a tibia fish belonging to the sturgeon, because it appears to be wearing unified iron armor.

The growth rate of sturgeon, also called longevity fish, is very slow, and it takes at least three to seven years to grow eggs from a fish to a sea urchin. The sturgeon, which has been nicknamed the Emperor Fish by fisherman in China, Russia, France, and the Papacy, has been greatly reduced in captivity by humans, and the amount of world catches has sharply decreased since the 1990s. as of 2016, its prices are five times more expensive that before.

Ingredient and Efficacy of sturgeon

The sturgeon comprehensively contains protein, fat, collagen, vitamins, minerals, turbine and trace elements

There are 18 kinds of amino acids in the sturgeon’s muscle, liver, gill, heart, digestive tract, air bladder, etc including: non-essential amino acids (Asp, Gul, Ser, Ala, Tyr, Cys, Pro) Thr, Val, Met Phe Ile, Leu, Lys, Trp) and His, Arg. It also contains a large amount of EPA (C20:5n3) and DHA (C22:6n3) which are very useful ingredients of omega-3 (polyunsaturated fatty acid). In addition, sturgeon is rich in vitamins such as niacin, pantothenic acid, Pyridoxine, vit B12, and minerals such as magnesium, sodium, potassium, calcium and iron.

About 68% of collagen is composed of easily absorbable form

Among the components of sturgeon, Collagen is a light protein that constitutes the bones and skin of the human body. It acts as a link between cells and cells. It functions as glue for calcium, which constitutes joints, cartilage, eye cornea and bones in the body. It is very important as a component of the dermal layer of the skin that is responsible for senility and aging

There is a large amount of chondroitin sulfate in cartilage and spinal cord of sturgeon

Chondroitin sulfate is an essential component of the extracellular matrix of connective tissues that make up the cells.
They are made through special interactions with proteins, such as growth, differentiation, division and migration. In particular, chondroitin has a high affinity for articular cartilage, and its efficacy has already proved to be good for treating and preventing arthritis through many clinical studies.

Ecology and Habit of Sturgeon

Types of Sturgeon that are Currently Cultivated in Korea

Siberian Sturgeon

Spawning starts when the temperature rises from 9 to 18 ℃ in spring and the amount of spawning is from 13,000 to 20,000 per kg, 2.5 to 2.8mm in diameter and 18.5 to 20mg in weight. The bottom is gravel and spontaneously spawning at a depth of 6 to 8 m and a flow rate of 1.4m/s. this species is gentle in nature and strong in breeding environment and is trying to cultivate in various countries.

Starlet Sturgeon

Average size is 2~3kg, average life is 15 years, maximum life is 27 years, 1.2m, 16kg size. The amount of forage is 20,000~30,000 per kg, egg size is 1.82.8mm and egg weight is 8~9mg. at 16 ℃, the incubation takes 4~5days, with a load of 6 to 7mm. after 6 to 10 days after hatching, it absorbs yolk and eats external food.

Russian Sturgeon

Sexual maturity takes 8~13 years for males and 10~16 years for females. Spawning cycles are 2 to 3 years for males and 3 to 6 years for females. The egg size is 3.0~3.5mm and the value of caviar is very high. Hatching takes 12 days at 12 ℃ and 4 to 5 days at 22 ℃. Ecstasy consumes mosquito larvae, benthic animals, and mollusks.

Sturgeon

Vastor is an interbreed hybrid species and has been developed in the Soviet era. It is a hybrid obtained by the Fisheries and Ocean Research Institute between 1958 and 1967, the largest species of sturgeon, the Beluga female, and the smallest and fastest-growing Sterlet male.
